Mansaf is one of Jordan’s most iconic dishes, and it’s made with jameed — that rich, tangy yoghurt that gives the dish its unmistakable flavour. Tender meat, warm rice, and that creamy jameed sauce poured generously over the top. It’s bold, comforting, and made for gathering. Traditionally, shrak (marqook) bread is laid at the bottom before the rice and meat go on top. I didn’t have access to it this time, but it’s an important part of how mansaf is usually served.
